A Season that can’t Make Up its mind
Spring in Colorado rarely arrives all at once. One day feels like summer, while the next reminds us winter is still close by. The trees take their time waking up, the ground slowly softens, and many of us find ourselves moving through seasons that feel much the same.
In times like these, we learn to work with what we have. Not perfectly or extravagantly, but faithfully. Often, practical nourishment looks like a few dependable ingredients, something warm on the stove, and a meal that stretches further than expected.
This month, we’re highlighting one of the most adaptable staples many families already have in their pantry: rice. Simple, affordable, and flexible, rice becomes a comforting and filling meal when combined with canned soup, vegetables, broth, and whatever protein is available.
This Creamy Rice with Canned Soup and Add-ins recipe reflects the heart behind many meals made in tight seasons. You work with what’s available, make adjustments as needed, and share what you can. Around the table, simple ingredients often become something more meaningful than we expected.
As spring slowly unfolds around us, may we notice the quiet ways God provides — in our communities, in shared meals, and sometimes in the simple ingredients already waiting in our cupboards.
The Heart Behind It
At Crossfire Ministries, we believe food is never just food. A meal can be a reminder of God’s care, a practical expression of love, and a way to bring people together with dignity.
Through our no-cost grocery store, families can choose the food that fits their needs and prepare meals that nourish both body and spirit.
Recipes like this one are simple, but they point to something lasting: God often uses ordinary things to provide for His people. A shared meal, a prepared table, a thoughtful offering—these small acts can carry real hope.
From heart to table, we remember that provision is one of the ways God makes His love known.
A Devotional Thought
God Often Works Through What’s Already There
Throughout Scripture, provision often begins with ordinary things.
A few loaves. A jar of oil. A handful of flour. A shared table.
God rarely waits for abundance before He begins caring for people.
He starts with willingness.
Willingness to prepare. Willingness to share. Willingness to trust that even simple things can still become enough.
Meals like this remind us of that.
Rice. Soup. A few vegetables. Whatever protein is available.
Nothing extravagant. Yet somehow, it becomes warmth. Comfort. Care. A meal that gathers people together.
At Crossfire Ministries, we see this every week.
Guests shop with dignity and freedom of choice. Volunteers serve faithfully. Donations are stewarded thoughtfully. And simple ingredients become meals that help families breathe a little easier.
Provision does not always arrive dramatically.
Sometimes it looks like a stocked shelf. A warm bowl. A neighbor who cared enough to help.
From heart to table, we remember that God often works through what’s already there.
—RECIPE—
Crossfire’s Creamy Rice with Canned Soup and Add-ins
Servings: 4-6
Ingredients:
Rinse the rice: Put the rice in a fine-mesh strainer and rinse under cold water until the water runs mostly clear. This removes excess starch and helps prevent gumminess.
Mix the base: If using fresh onion and garlic, sauté onion until translucent (about 3-4 minutes), add garlic and sauté until fragrant (about 30 seconds), then continue as follows. In a medium pot or deep skillet, whisk together the condensed soup and 1 ¾ cups of your chosen liquid (use 2 ½ cups if you use brown rice). Add oil/butter, salt, pepper, garlic, onion, and herbs.
Add the rice: Stir the rinsed rice into the pot. Make sure all grains are submerged and evenly coated with the creamy mixture.
Bring to a simmer: Set the heat to medium and bring the mixture to a gentle simmer. Stir once to loosen any rice from the bottom.
Cover and cook: Reduce the heat to low, cover tightly, and cook for 15-18 minutes, or until most liquid is absorbed and the rice is tender. Avoid lifting the lid - STEAM IS YOUR FRIEND.
Add extras: Gently fold in vegetables and cooked protein during the last 3-5 minutes of cooking so they heat through without overcooking. If the mixture is too thick, add additional liquid (your choice).
Finish with cheese: Turn off the heat and stir in shredded cheese. Let it rest, covered, for 3-5 minutes to melt the cheese and thicken slightly.
Taste and adjust: Add more salt and pepper if needed. Finish with chopped parsley or chives.
Serve: Spoon into bowls and enjoy with crusty bread and/or salad.
Helpful Pantry Notes
This recipe is intentionally flexible.
Use what you already have available.
Frozen vegetables work well.
Leftover rotisserie chicken stretches beautifully.
Brown rice works too — just increase the cooking liquid slightly.
Milk creates a creamier texture.
Broth deepens flavor.
The goal isn’t perfection. The goal is nourishment.
